Here’s my first go at Menu Plan Monday! I used to be an avid menu planner. I had meals planned and lists made at least a month in advance, and was a firm believer in cooking meals only once a day because I wasn’t quite ready to try once a week or once a month. Then….
We moved. We live in a studio, without a full kitchen. We have access to the one upstairs, but we like to avoid it whenever possible during the summer because of the additional heat, and in the winter, well, because it’s cold and we have to go outside to go upstairs… plus carrying stuff up and down those things over and over really isn’t fun.
So… we have: an electric skillet, an electric stove eye, a microwave, a George Foreman grill, and a charcoal grill outside, with a mini fridge, and a deep freezer in the back. We make full meals at least 4 nights a week… all right, hubby makes full meals at least 4 nights a week, but with our limited space constraints, we tend to cook with whatever we have on hand and what we can find in the freezer, rather than planning our meals out. The other three nights, we grab quick stuff to throw in the nuker, make a sandwich, or eat leftovers.
With hubby’s culinary explorations as he tries to expand his horizons and get ready for life as a chef, he comes up with ideas at random, so we’ll start planning our meals again as an exercise in budgeting, and making sure he gets to try his hand at making everything his heart desires.
Here goes nothin’! We don’t get to go to the store often since we don”t have a vehicle right now, but we’ll see how it turns out….

- Breakfast: Toast with Eggs and Cheese (for Mom and Dad. Joe will be in school and have whatever the school serves. He likes it that way!)
- Lunch: PB&J with pretzels (yes, we eat like school children)
- Dinner: Chorizo and Egg Burritos: I’ll share the recipe soon. It’s my son’s favorite!

- Lunch: Baked Potatoes
- Dinner: Bacon and Cheese Quiche
Saturday August 28, 2010 (Happy Birthday to me! I’m 25 today!)
- Breakfast: Cold Cereal
- Lunch: Sandwiches
- Dinner: Baked Mac n Cheese

- Breakfast: Biscuits and Gravy
- Lunch: Leftovers
- Dinner: Frozen Pizza (you’ll see we’re kinda lazy on Sunday!)
Not adventurous, not always healthy, but you get the idea.
