Unfortunately, truffalo sauce will be at BWW only for some time. Luckily, making truffalo sauce is no rocket science. All you need to do is to prepare a classic buffalo sauce and add some white truffles or truffle oil if you can’t buy fresh truffles.
- 1/2 cup hot sauce (Frank’s Red Hot is the traditional choice, but Tabasco will work too)
- 1/2 cup butter (or margarine will also do)
- 4 tablespoons cider vinegar or white vinegar
- 3 tablespoons truffle oil or 25 grams finely grated white truffles
- 2 tablespoons Worcestershire sauce (optional)
- 1 tablespoon brown sugar or honey (or more to taste)
- 2 teaspoons kosher salt (or more to taste)
- 1 teaspoon black pepper (or more to taste)
Add all ingredients to a small pot and whisk until smooth. Bring to a simmer over medium heat and continue whisking until the sugar has dissolved and the sauce is thickened. Remove from heat. Taste for seasonings — you might want to add more brown sugar or hot sauce to your liking.
If you prefer a spicier Buffalo sauce, feel free to add more cayenne pepper sauce. I typically use about half as much as listed above; if you’re sensitive to spice, start with even less and add more as needed.
For best results with this recipe, you’ll want to use Frank’s RedHot Original Cayenne Pepper Sauce. It’s my favorite brand of hot sauce for recipes because it has just the right amount of kick without being overpowering (or tasting artificial).
